Grilled Steak Sandwich with Caramelized Onions and Goat Cheese

Makes 6 servings

Steak
2  pounds beef ribeye steaks, trimmed and cut into 5oz portions
1  tablespoon salt
1  tablespoon  black pepper
1  tablespoon fresh rosemary, chopped
1  tablespoon fresh thyme, chopped
1  tablespoon garlic, minced
1  tablespoon olive oil

Toppings
4  ounces goat cheese
1  pound onions, sliced
1  tablespoon butter
1  tablespoon fresh thyme, chopped
1  teaspoon salt
1  tablespoon black pepper
2  ounces arugula

Bread
6  ciabatta rolls, or bread of your choice
1  tablespoon butter

For the Steak:
Combine the salt through olive oil and rub the steak.  Marinate overnight.  The next day, grill the steaks to desired doneness.

For the Toppings:
Caramelize the onions with butter and salt over low heat until deeply browned.  Add thyme to the onions.  Cool.  Mix the onions with the goat cheese.

To build the Sandwich:
Toast the bread on a griddle or in a pan with butter.  Spread goat cheese on the top of the bread.  Place 1 piece of steak on each sandwich, and follow with arugula.  Serve.
