Kenyan Beans and Greens with Rice

INGREDIENTS

GREENS (SUKUMA WIKI)

  • 2.5 tablespoon oil, red palm
  • 1 each onion, yellow — diced
  • 1/2 tablespoon cumin, seed — toasted and ground
  • 1/4 tablespoon coriander, seed — toasted and ground
  • 1/4 tablespoon turmeric, ground
  • 5 each tomatoes, roma — diced
  • 1.5 pounds kale — stems removed, cut into 2″ pieces
  • 2 tablespoon salt to taste
  • 1/4 cup water — as needed
  • 2.5 tablespoon juice, lemon — to taste

BEANS

  • 1/2 pound beans, black-eyed peas
  • water — to cover
  • 2 tablespoons salt to taste

PEANUT SAUCE (KUNDE)

  • 1/4 pound nuts, peanuts, blanched, roasted, unsalted — or can use PB from store
  • 2 tablespoons oil, red palm
  • 2 each onions, yellow — diced
  • 1/4 tablespoon coriander, seed — toasted and ground
  • 1/4 tablespoon turmeric, ground
  • 3 each tomatoes, roma — diced
  • black-eyed peas, from above — from above
  • 1 cup water
  • 1 tablespoon salt to taste

RICE

  • 2 cups rice, basmati
  • water — as directed on packaging
  • 2 teaspoons salt

DIRECTIONS

BEANS

  1. Soak beans in water overnight
  2. Drain and rinse beans in a medium pot.
  3. Cover with water, just enough to cook.
  4. Bring to simmer and cook until beans are tender.
  5. Season with salt in last 30 minutes of cooking.
  6. Strain beans and hold hot. Reserve bean liquid.

GREENS

  1. Prep kale as directed.
  2. Dice onions and tomatoes.
  3. Toast and grind spices.
  4. Heat oil in a large saute pan.
  5. Add onions and spices.
  6. Cook until well softened and spices have melded.
  7. Add tomatoes, kale, some salt, and water.
  8. Stir and simmer, keeping lid closed to retain moisture.
  9. Cook until greens are tender and soft.
  10. Add water (or cook off water) as needed to maintain consistency.
  11. Season to taste with lemon juice and salt.

PEANUT SAUCE

  1. In a food processor, blend peanuts into peanut butter. *CAN USE STORE BOUGHT PEANUT BUTTER FOR THIS STEP*
  2. Process until oil begins to separate from peanuts.
  3. Dice onions and tomatoes.
  4. Toast and grind coriander.
  5. Heat oil in a medium saucepan.
  6. Add onions and cook until well softened.
  7. Add spices and cook until just fragrant.
  8. Add tomatoes, a little salt, and cook until tomato liquid has nearly evaporated.
  9. Add beans to mixture.
  10. Add peanut butter and water OR bean liquid.
  11. Bring to simmer and cook until beans and peanut butter have melded together.
  12. Adjust with water as needed for desired consistency.
  13. Taste and adjust seasoning.

RICE

  1. Make rice according to directions on packaging. Fluff and season to taste with salt.

SERVE

1/2 cup rice, 1/2 cup peanut sauce, 1/3 cup greens
